Bailly Lapierre is a beautiful cooperative located in Saint-Bris-le-Vineux, they have a completely unique cellar system in a 50 meter deep quarry. The grapes are pressed on top of the mountain after which the juice runs 50 meters down to the cellars which have perfect temperature and humidity all year round. Bailly Lapierre, despite its large scale, is known as one of the top Crémant de Bourgogne producers; their sparkling wines are perhaps the best value for money imaginable! By the way, the 'blanc de blancs' and the 'blanc de noirs' have a huge storage potential.
