Bailly Lapierre is one of the most famous cooperatives for the production of Crémant de Bourgogne, with many members near Auxerre. In 1972, this group of winegrowers secured its own AOC for Crémant de Bourgogne. The wine is made in a former limestone quarry, carved into a mountain just outside the city. This vast complex is a perfect cellar for aging the wines.
