The 'method traditionelle' is used to make this wine, so the same method as Champagne. The wine is then aged for about 18 months on lees. In the nose cookie, apple and floral tones. Tight, dry taste with fine mousse.

Bailly Lapierre is one of the most famous and best cooperatives for producing Crémant de Bourgogne. Located near Auxerre, Bailly Lapierre is home to many winegrowers. In 1972, this group of winegrowers secured Crémant de Bourgogne its own AOC. The wine is made in a former limestone quarry, carved into a mountain just outside the city. This vast complex is the perfect cellar for aging the wines.
