Bailly Lapierre is one of the most famous and best cooperatives for producing Crémant de Bourgogne. Located near Auxerre, Bailly Lapierre is home to many winegrowers. In 1972, this group of winegrowers secured Crémant de Bourgogne its own AOC. The wine is made in a former limestone quarry, carved into a mountain just outside the city. This vast complex is the perfect cellar for aging the wines.
