Organic—dynamic, restrained, and with a Loire Valley feel. Complex flavors, each revealing something new in the glass, with notes of gooseberry, bell pepper, and blackcurrant leaf. This is a Sauvignon blanc with depth and a round mouthfeel enhanced by the crisp acidity. This wine pairs well with hearty fish dishes, but also think of grilled crayfish, drizzled with a little lime and butter—a perfect asparagus wine.

In 2004, Waterkloof was purchased by Paul Boutinot. Waterkloof is located on Schaapenberg Hill in Somerset West, Stellenbosch, just three kilometers from the ocean. The vineyards for Waterkloof wines are situated on the upper slopes of this estate, 300 meters above sea level. They are characterized by their mineral character and elegant style. Waterkloof is a biodynamic winery where they work with great respect and knowledge of the land, the plants, and the animals that live on it. No tractors are used, only horse and cart. This reduces the amount of exhaust fumes on the grapes and ensures that the soil remains aerated; heavy machinery compacts the soil too much, which is detrimental to soil life. Chickens, sheep, horses, and cows are kept at Waterkloof, each with its own purpose: for fertilizer, weeding, transport, and so on.
