Method - The grapes are harvested and cold-skinned for enhanced aroma. Fermentation takes place in stainless steel tanks. The wine then matures for several months in large wooden barrels.

In 2002, Anne and Thierry Bonnel took over the estate in Aigne from their parents. The vineyards (30 hectares) are not on the plains, but on the (sometimes very) steep slopes. This makes mechanical processing impossible (no tractor can get through them), but it actually enhances the terroir: the wines are more elegant and possess more finesse than wines from the plains. This is remarkable, as this is the hottest part of the Minervois! There are many old to very old vines, which enhances the complexity. No pesticides are used. Excellent quality and very affordable!
