This Prosecco is slightly different from most. Emilio has chosen not to filter the Prosecco - there is still a layer of yeast at the bottom of the bottle. A Prosecco like this is therefore called Prosecco Col Fondo, which means 'with the bottom' - referring to the layer of yeast.
A Col Fondo, is often a bit drier than the standard filtered Prosecco and has a funky edge. But above all, this Prosecco for super fresh and fruity. Before drinking you can tilt the bottle a few times to mix the layer with the wine, but Emilio himself advises not to do so.

Fidora Winery manages 102 hectares of vineyards, which are fully organic. They also have a strong preference for the region's indigenous grape varieties. Winemaking is carried out using traditional methods with an eye for quality; for example, the Amarone is only released after aging for five years. The use of new oak is kept to a minimum, and the added sulfites are kept to a minimum (>100 mg/l for white, >70 mg/l for red).
