This Prosecco is slightly different from most. Emilio has chosen not to filter the Prosecco - there is still a layer of yeast at the bottom of the bottle. A Prosecco like this is therefore called Prosecco Col Fondo, which means 'with the bottom' - referring to the layer of yeast.
A Col Fondo, is often a bit drier than the standard filtered Prosecco and has a funky edge. But above all, this Prosecco for super fresh and fruity. Before drinking you can tilt the bottle a few times to mix the layer with the wine, but Emilio himself advises not to do so.
