Champagne Petit & Bajan, Cuvee Nuit Blanche Blanc de Blancs

AOC Champagne

Concentrated, rich sparkling wine

The wine strikes a balance between ripe fruit, fresh spiciness, and bakery aromas from the lees (brioche and yeast). The palate opens full-bodied, with a small but present bubble, highly concentrated in flavor, and a long finish.

Winemaker

Petit & Bajan is run by Richard and Veronique. They began their apprenticeship with their parents but quickly realized they truly wanted to make their own wine. So they do. Since 2008, they've pursued their own path, and every year they find ways to improve and optimize their process. They make Champagne exclusively from Grand Cru vineyards in Avize and Verzenay. As they say themselves, they make wine without compromising on quality.
What's unique is that they pick their grapes very late, one to two weeks later than their neighbors. This is to ensure the grapes reach their peak sugar level, so they don't need to add any sugar later in the process.
