Aromas of ripe yellow fruit, spices, and lees. The palate is soft yet concentrated, the mousse is refined, and the finish is fresh.

Method - The grapes are picked very late, often 1 to 2 weeks later than average, to achieve full sugar ripeness. All grapes are hand-picked, and the bunches are pressed whole. Fermentation takes place in stainless steel tanks and malolactic fermentation is also performed. The wine matures on the lees for approximately 30 months and has a sugar dosage of 3 g/l.

Petit et Bajan is run by Richard and Veronique. They began their apprenticeship with their parents but quickly realized they truly wanted to make their own wine. So they do. Since 2008, they've pursued their own path, and every year they find ways to improve and optimize their process. They make Champagne exclusively from Grand Cru vineyards in Avize and Verzenay. As they say themselves, they make wine without compromising on quality.
What's unique is that they pick their grapes very late, one to two weeks later than their neighbors. This is to ensure the grapes reach their peak sugar level, so they don't need to add any sugar later in the process.
