A rare white wine made from the indigenous White Rufete grape, sourced from granite and slate soils in the Salamanca Mountains, near the Portuguese border. The wine is complex and layered, with aromas of ripe citrus, peach, herbs, and a subtle smoky minerality. Full and round on the palate, with fresh acidity, an elegant structure, and a long, salty finish thanks to two years of aging in French oak. Perfect with grilled fish, shellfish, creamy risotto, or white meat. A wine with excitement, ready to be enjoyed both now and in the coming years.

Bodegas Bhilar is a boutique winery located in Elvillar, Rioja Alavesa, and is run by husband and wife team David Sampedro and Melanie Hickman. They founded the business in 1999 and operate according to biodynamic principles. Their goal is to create wines with soul, respecting the land and using local grape varieties. Besides their Rioja wines, they also produce some wine in Salamanca, and Melanie runs a project called Struggling Vines, where she revitalizes old vineyards with quality grapes. All their wines are unique and highly distinctive.
