This Palo Cortado is selected from the criaderas of La Sacristía, a historic cellar in Sanlúcar de Barrameda. It is best served slightly chilled in a white wine glass to allow its aromas and structure to fully develop. Palo Cortado is essentially a refined style that combines the elegance of an Amontillado with the body of an Oloroso. This version is particularly suited to extended aging, which adds complexity and depth.

La Sacristía is a small bodega within La Casa de Cilla. This Andalusian-style building, built in 1782, once served as a manor house, warehouse, and administrative center for the tithes paid to the Church until 1841. La Sacristía is situated next to a Moorish patio with graceful arches and columns and houses some of the finest and rarest palo cortado in existence—much of it over a hundred years old.
The Barbadillo family's dedication to the entire winemaking process, from vineyard to bottle, may be a given in most renowned wine regions, but it has long been a rarity in the Sherry region. The result is wines with strong character, expressing both the terroir of the vineyards and the aging cellars—wines admired for their finesse, complexity, and authenticity.
