This Oloroso, selected from La Compañía's criaderas , is best served slightly chilled in a white wine glass. Due to the slow oxidation during the long aging process, the wine has a full, rounded, and spicy flavor, which pairs perfectly with rich dishes of all kinds, such as hearty stews, red meat, and aged cheeses.

La Compañía is named after the Jesuit monastery built on this site in 1630. The winery is located in the "new" church, which was completed in 1717—just fifty years before King Carlos III expelled the Jesuits from all Spanish territories.
The Barbadillo family purchased the building in 1942 at public auction and have used it for the oxidative maturation of sherry ever since.
The Barbadillo family's dedication to the entire winemaking process, from vineyard to bottle, may be commonplace in many classic wine regions, but it has long been exceptional in the Sherry region. The result is wines of distinctive character, reflecting both their origins and the dual terroir of vineyards and aging cellars—wines prized for their finesse, complexity, and authenticity.
