The grapes from two different vineyards are pressed and fermented separately. Fermentation begins with a short maceration period. Fermentation takes place with indigenous yeasts in temperature-controlled tanks at 17°C. Liège is aged for four months.

Barbadillo is a household name in the sherry region and known for wines like Solear Manzanilla. They are one of the largest producers in Sanlúcar de Barrameda. Despite their size, they remain a family business with many small bodegas under their wing. They have existed for almost 200 years and offer ample opportunity for innovation and small-scale projects. "Barbadillo en Singular" is the project through which they focus entirely on organic viticulture and, consequently, a relatively new line of wines.
And Singular wines are made by Montse Molina, near Sanluca, which strives for clean and pure wines with a true terroir expression of Jerez.
