Fresh, hearty white wine

The grapes from two different vineyards are pressed and fermented separately. Before fermentation, there is a short maceration period. Fermentation with indigenous yeasts takes place in temperature-controlled tanks at 17°C. Liqueur aging lasts four months. The wine then ages for one year in old barrels—used for Manzanilla—partially under a thin layer of flor.

Winemaker

Barbadillo is a household name in the sherry region and known for wines like Solear Manzanilla. They are one of the largest producers in Sanlúcar de Barrameda. Despite their size, they remain a family business with many small bodegas under their wing. They have existed for almost 200 years and offer ample opportunity for innovation and small-scale projects. "Barbadillo en Singular" is the project through which they focus entirely on organic viticulture and, consequently, a relatively new line of wines.
And Singular wines are made by Montse Molina, near Sanluca, which strives for clean and pure wines with a true terroir expression of Jerez.
