Agusti Torelló is a quality Cava house that works exclusively with traditional grape varieties—Macabeo, Xarello, and Parellada—from this unique region just south of Barcelona, around the town of Sant Sadurní d'Anoia. All wines are disgorged (the yeast residue is removed and the champagne cork is inserted) only upon order, ensuring they remain fresh longer after delivery. The disgorge date is also printed on the bottles, something many Champagne houses still don't do. Moreover, it is one of the few houses that dares to make all its Cavas from a single vintage. Agusti's wines are characterized by a beautifully dry and honest style. Agusti Torelló is the only Cava house that sells its bottles primarily in (the top restaurants of) Catalonia, such as El Celler de Can Roca. The fact that Agusti Torelló is the most important Cava house is evident from its extensive international recognition.
